A fondant do, or don't?

SoonToBeMrsTanzer, on August 26, 2011 at 6:17 PM Posted in Do It Yourself 0 35

I love fondant-covered cakes because they look so neat and clean. I love cheesecake because it's so delicious. What I'm wondering is, would it be too much or taste too rich if our three tiered cheesecake-cake was covered in fondant? There will be a cherry juice "puddle" on top with cherries (not ice cream cherries, the pie filling ones) and more juice drizzling down one size to represent a "Love Waterfall", with the extra cherries acting as "rocks" here and there, and each tier will have edible pearls dotting around them. I felt the fondant would be a good solid base so that the cherry juice wouldn't 'melt' in with the cheesecake. Thoughts?

I'm not an expert on cakes by any means. However, as a wedding photographer, I've had the opportunity to taste many, many cakes. lol So here's my 2 cents, plus what I know and was told by the bakers I have relationships with.

Have you tasted Fondant before? It is not sweet. Europeans are used to fondant and like it. Americans have a sweet tooth, are used to sweeter icing on their cakes & tend to not like fondant at all. A great baker can take a buttercream frosting and make it look pretty darn close to fondant (I know quite a few of them down here...as well as having done that for my wedding cake 2 years ago).

I would talk to a bakery about this (or whoever you're hiring for your cake). They might be able to help you achieve the look you want as well as give your cake a delicious, memorable taste!

There was another thread on this recently. The gist was that apparently there is such a thing as decent tasting fondant, but I've never had it. I think it tastes like wax, but now that I know that, I eat around it so it's no big deal. It may look nice and neat but it's wax that the cake decorate had his/her hands all over. Bleah. So I vote no, but I'm sure there's a good way to do it if you want to.

Those are some valid points- I have seen buttercream frosting before and with our theme I feel it might go better, and if it's refrigerated overnight, it should be nice and solid the next day. Plus, it'll have more of a country look to it which is what we're going for!

Pastry chef here. NO NO NO. Don't do it. Fondant is fine, but a cheesecake does not have the structural support and has too much moisture in it, and would ruin the fondant.

I want to school for cooking and fondant is pretty when it comes to decor, but it taste nasty!!! at least to me. most people don't even eat it they peal it off and eat the cake inside. so save yourself some money and just get it iced regular.

I was sold on the fondant for the clean look but after one taste we decided against it. We decided in buttercream and the right decorator can make it look just as good and clean.

I'm liking the buttercream idea more and more, but usually cheesecake doesn't need to be covered by anything. Would it work to refrigerate it overnight (without buttercream frosting) so it's really solid (but not frozen), and then decorate it and refrigerate until it's ready to be served? Our reception venue is a picnic shelter with a huge pavilion that has a kitchen built in, so there is a fridge for storage.

Honestly I don't know how a cheesecake with taste with frosting on, I've never had it but it doesn't sound to me like it'll be good.

Oh and I've tasted/made both buttercream and fondant and buttercream is MUCH better!!

@Kathy R.-This is kind of how my cake will be, except orange and purple tiers with black ganache dripping and black spider webs :-D Love that striking blue against the brown!

@Kathy that cake is beautiful! I can't believe how pristine the buttercream came out, and it has one of my flowers on it! lol I also love the beading around the bottom of each tier. I have a while yet so I'm definitely keeping the buttercream in mind!
