Accidentally ending up with 2 wedding cakes 🤦🏼‍♀️

So, long story short... our original baker refused to move the deposit of our wedding cake to our new date once Covid hit. Rather than pay her another $500, we decided to take $500 we had already paid her as a loss, and go with a different bakery who would allow us to move our date if the pandemic was still an issue on our new date. Fast forward to today, and suddenly the original baker is emailing me telling me she is now willing to transfer our deposit to our new date. so, it looks like we will now be having 2 wedding cakes! 🤦🏼‍♀️😂🤷🏼‍♀️
Our first wedding cake will be heavy, rich & chocolate based. So we thought for the second cake we would like something light. Maybe something fruity? I have also heard of champagne wedding cakes, but have never actually tried one. Has anyone tasted a champagne cake before? Does it actually taste like champagne?? Any suggestions for light flavored or fruity cakes are greatly appreciated!

    What a good problem to have lol we sampled pink champagne cake with raspberry filling and omg..it was amazing. If we had gone with that bakery, or any other bakery that offered it, it would have been my first choice.

    The cake that Caytlyn just described sounds heavenly! That sounds really yummy!

    I also like the idea of lemon poppy seed cake. It's a personal favorite!

    Fruit cakes can be hit or miss depending on the crowd and baker. Something light like a vanilla sponge cake with raspberry jam or custard filling would be a good alternative to chocolate.

    You can never have too many dessert options, so 2 wedding cakes sounds great! I think your idea of one rich and one lighter is a good idea. It might also be fun to go all on the decorations/design with one!

    I’m definitely a fan of lemon! Someone else suggested lemon blueberry, which also sounds amazing!

    Any suggestions on a lighter flavor? I feel like I know every rich flavor combination, but no lighter options! LOL
    As far as decorating, we are going to do polar opposites on the 2 cake! The original cake will be dark and moody, and the second cake is going to be light and sparkly ✨

    Any suggestions on a fruit flavor or any lighter flavor cake?
    I figure now guests can choose which they want, or both! Plus, now there will be enough for everyone to take a slice home with them too

    I think that a strawberry and cream cake (like a strawberry shortcake) would be a good idea or even a red velvet cake!

    I had vanilla cake but my fillings were fruit. one layer was mango. and the other two were strawberry

    We did vanilla (traditional) cake with fresh strawberries inside and vanilla buttercream frosting as our lighter option. The strawberries were in the center of the case so when it was cut, they literally fell onto your place. Super yummy. You could do something like that.

    Or, if you want to go really fun, a vanilla funfetti cake with a flavored icing! We seriously considered that!!!!

    I think anything with strawberry would be a good option! Maybe like a vanilla or lemon cake with fresh strawberries?

    My favourite is a light spice cake, with hazelnut cream in the frosting, or Grand Marnier. Nuts or orange.
