“And guest”

So I have a while but I’m laying in bed and can’t go to sleep until I ask this question.


I’m giving some guests a plus one and on my wedding website it just says “and guest”
If they RSVP for a guest, would you reach out to ask their guests name?
I am doing a seating chart So I didn’t know if I would need their names or if I just do it as a couple and same “John Smith and guest” on the escort card? I was going to do individual escort cards buuut seems like it may be easier to do couples
