Buffet Style: Food ideas?

Hello! We are doing buffet style. But we want to incorporate both Mexican & Salvadorian foods, even deserts. Any ideas? No tacos...everyone has tacos! 🤣

Fish or shrimp Veracruz, enchiladas, chicken mole, Chile relleno (stuffed peppers), carnitas or cochinita pibil, anything with chicharron crumbles in top, loroco and meat pupusas. For apps, I recommend flautas or taquitos, elote. Add margaritas. Sorry more acquainted with Mexican food. Can you ask family members or friends what they serve at big gatherings?
