Buffets - how many options?

FH and I haven't nailed down a caterer yet but FH would like to do buffet style. How many different proteins and sides should we pick out? We want the food to be plentiful without there being a lot left.

    I'm established enough where my fiancé and I don't need to have a budget. Our wedding excluding the honeymoon and my ring is at about 30k, my ring cost 20k, and our 2 week honeymoon to Venice and the Amalfi Coast will run us about 10k. So figure roughly 60k total.

    We are having plated meals with 3 protein options- chicken Francese, salmon, and some steak dish. Top shelf open bar of course.

    Okay so TRL just posted on the last page that her buffet wedding is 40k which according to my math is more than 30k. Explain to me how buffet weddings are cheap again?

    Maybe because the 40k buffet wedding is in a higher COL area than where I am? Or, you blew your cash on something stupid and unnecessary like excess up lighting or some nonsense.

    I almost got married in Boston but chose Richmond,VA, where I live now. My budget is 30k and im able to do a LOT more with that amount here than I could have in Boston....just saying.
