Cake Flavors

Hello!

I used to be a pastry chef so my vision for my wedding cake is important to me and something I have been dreaming of for a long time! I have a clearer vision about my cake than I do about my wedding dress! My mother seems to think that my flavor is too specific and people won't like it so let me run it by the WW community...

My wedding is the beginning of November so I lean towards fall flavors. I REALLY want a partially naked spice cake with a lemon mousse filling garnished with lots of fresh fruit and flowers. I will also have vegan cupcakes that are available to our vegan guests and to anyone who just wants plain vanilla or chocolate.

The flavor profile I'm going for is similar to those Carr's Ginger Lemon Creme english tea cookies.

My mom seems to think that my pastry chef background makes me too specific about this and that I'm not thinking about what my guests will enjoy. I, however, think it is a pretty widely enjoyed flavor and the warm baking spices in the cake with slight pop of lemon zest in the mousse filling will go perfectly with the tea and coffee we're offering after dinner!

Is my flavor too specific to me and guests won't enjoy it?

    I think your mother's idea of what wedding cake flavors are allowed to be is too specific. Smiley laugh

    Honestly, you are providing cake and cupcakes in different flavors and your guests will be absolutely fine with this. Proceed with your plan and stop discussing this with your mom.

    I personally probably wouldn't enjoy it. I've never had it before though so I could be wrong, but it seems like a bit much going on? I definitely see the pastry chef in you lol. But I wouldn't complain as a guest, I would simply just eat one of the vanilla or chocolate cupcakes that you are also offering!

    Its hard to say what your guests will like or what they won't like. I'm definitely open to trying new things and I've never had a spice cake and I'm not a huge lemon fan - as a guest I would try it and if I didn't like it I wouldn't eat it. My FH hates cake but when we go to weddings he makes a point to try it - then it just reaffirms the fact he hates cake lol.

    I hope you would get to have a slice of your cake! I've read a lot of the times that bride and groom didn't know cake was being served and they didn't get a piece! I say go for it. I'm sure it will be yummy!

    Its your cake get the flavor you want!!! My family told my brother in law that a cheesecake cupcake was crazy and wouldnt work but their baker make a chocolate raspberry cheesecake cupcake that was amazing. I am using the same baker and it was so good that I am getting the same flavor as one of my cupcake options myself. Due to COVID our baker isnt doing tastings but both my sisters used her for their weddings and every single flavor she did was great so I am so excited to get our cupcakes when its time. We are doing a small cake for cutting/us (flavor undecides yet) and then a white/vanilla cupcake, a lemon cupcake, the cheesecake cupcake and a chocolate strawberry cupcake.

    It’s your wedding and only you need to be the one who likes the cake. We had a similar thing where I wanted white chocolate raspberry and lemon and my mom was against it but it’s your wedding and if people don’t like the cake then they won’t eat it and more for you!

    Go for it! It may sound too specific for her, but it means a lot to YOU! And that is what truly matters. Sounds really good too btw haha.

    I think it’s your day and you plan the type of cake you would like. The guests will like whatever you choose. We just did our cake sampling and we are thinking about going with either chocolate chip with vanilla icing or cookies and cream. I say go with what you would like! ❤️

    It sounds specific when you describe it, but what you're describing is actually just spice cake with lemon filling. Delicious! Do you have a baker all set? The bakery is really the only people you have to get specific with. Tell everyone else who asks it will be spice cake. Mom's gonna love it.

    Why don't you see if your cake baker will do different flavors for different tiers of the cake? The flavors you're discussing are very specific and not overarching to many people, but if they are important to you, it's important you get the cake you want.

    Do what you like but make sure the flag are not so exotic that no one will enjoy them. Ginger lemon works fine for cookies but may not translate well to cake. Ask various bakeries for samples before you decide. Cinnamon or spice cake with cream cheese filling is popular and sticks with the fall theme. You can also have an exotic flavor you want for the top tier and eat that yourselves at the wedding or take with you to the wedding night hotel and have something more crowd pleasing for the other tiers.

    I don't think it matters at all whether people will like it. There is no way that any event will ever please 100% of the people, 100% of the time. You will ALWAYS have someone mention how they didn't like this or that, even if it was the most perfectly balanced meal imaginable.

    The thing to remember, is that they're not paying for it, you are. It's not their wedding, it's yours. So if you wanted to serve animal entrails and finish it off with cakes made from orange juice and toothpaste, well - that would be your prerogative!

    Personally I think it sounds like an interesting and exciting cake, and I'd love to try it! And if I didn't like it - who cares? I could always swing past McDonald's for a sundae on my way home if I was that desperate!

    I would be game, my husband would skip it. It is quite unique. But if you have a smaller cake with plenty of vanilla and chocolate cupcakes, I think you’re fine!

    I love spice cake but hate fruit filling of any kind so I would not eat it. I would have a cupcake instead (even though I'm not vegan).

    I’m trying to show my mom that these flavors are not exotic at all! It’s the same spices that go in the very popular pumpkin spice latte but without the fake pumpkin flavor! I’m actually very friendly with the baker who is making the cake as she has been following my pastry Instagram account for years and so we connected a long time ago through that! She obviously thinks it will be delicious but I’ll see if she thinks it’s worth making the other tiers different flavors if we’re already offering plain flavored cupcakes. Thanks!

    My godsend of a wedding coordinator has it in our contract that she will make sure a couple of plates of food and cake will be sent to our hotel room just in case we don’t get a chance to eat at the reception! My FH is a sous chef and I used to be a pastry chef so we are VERY excited for our menu at the wedding! We would be CRUSHED if we didn’t get to eat any of it!

    That is awesome!! I’m curious as to what you are serving for dinner then! My FH loves to cook and I love to bake but we aren’t professionals in any sense 😂 our menu we picked BBQ beef brisket (it was amazing), lemon chicken (i know i said I’m not a huge lemon fan but cant go wrong with chicken, and it wasn’t too lemony), Mac n cheese, garlic mashed potatoes and green beans. It’s all buffet style. Our dessert is an apple cider donut sundae bar since my FH doesn’t like cake, we could have gotten a pie bar but I’m not a pie fan so we settled on donuts and ice cream lol

    That’s kind of what I’m saying! I’ve been to plenty of weddings where I didn’t care for the cake but it was the bride and/or grooms favorite so it made sense to have it there! My mom is all about having everything be for the guests enjoyment and not ours but I mean… COME ON!! Just let me have my cake hahaha!

    That sounds delicious!! We’re having my FH’s favorite bbq place cater our rehearsal dinner and apple cider donuts are my favorite!! We actually picked our venue because it is owned by our favorite restaurant so they exclusively do the catering. We went there on our first date and still go there all the time! Everyone knows us and is so excited for our wedding. The staff is even bickering over who gets to work our wedding! 😆 We’re having a plated dinner with a local greens and tomato salad with champagne vinaigrette (optional asiago cheese for vegans) and guests can choose between grilled rosemary chicken breast with a cabernet demi or filet mignon both served with a seasonal accompaniment that we trust the chef completely to make the decision on. The vegan option is grilled portobello mushroom stuffed with smoked ratatouille with marinara. They are doing our passed hors d’euvres (braised eggplant and tomato crostini for vegans or flank steak and caramelized onion crostini for meat eaters) for cocktail hour and they are making us pizzas for a late night pizza delivery to our after party too! We are obviously obsessed with this restaurant!
