Looking at venues in Mexico and Puerto Rico and while I'm hoping for a lot of it to be outdoors, I recognize it could be too hot? I plan to avoid the summer and hurricane season but wondering if anyone has any experience with an outdoor wedding on the beach with no AC??

Winter will be cooler than summer and less worry about autumn hurricanes. AC is not an outdoor option because it requires electricity and closed spaces. You can find an area with shade but many people have no issues with outdoor temperatures in the winter months.
