Kathryn_V, on October 11, 2016 at 9:46 AM Posted in Community Conversations 0 9

So I've already done a "soup" post and got a crap ton of ideas for soups, but what about some casserole recipes? Anyone have any great recipes they want to share?

Oh my favorite is French Onion Chicken Noodle Casserole. The epitome of soul-soothing!

    4 cups cooked chopped chicken

2 cans cream of chicken soup

16 oz container French Onion Dip

    1 cup cheddar cheese

    12 oz egg noodles

1 cup crushed French fried onions

Cook egg noodles according to package directions, drain.

Preheat oven to 350 degrees. Lightly spray a 9x13-inch pan with cooking spray.

Combine chicken, soup, dip, and cheese. Stir in cooked egg noodles.

Pour mixture into prepared pan. Top with crushed french fried onions.

Bake for 25-30 minutes, until heated through.

My Minnesota college days bring back some great "hot dish" ideas lol. My favorite is tater tot because come on, tater tots! If you've never had it, it's basically ground beef with mixed veggies in a creamy sauce (think shepherds pie filling) topped with tater tots and baked. And they usually had extra tater tots that were nice and crispy with it. Mmmmmm

DH really likes hamburger pie. It's so cheap and easy.

1/2 lb of ground beef, browned

    4-5 potatoes, sliced

1 can cream of mushroom soup

1 can milk (just pour the milk into the soup can)

1/2 to 1 cup cheddar cheese

Slice the potatoes and spread them around the bottom of a baking dish. Mix the soup mixture and ground beef together and pour over the potatoes. Top with any remaining potatoes and sprinkle with the cheese. Bake at 350 for 30-45 minutes.

    So good. So cheap!
