Caterer Struggles

I live in Arlington but made a trip down to Norfolk to specifically visit two caterers for tastings. Despite positive reviews on their Wedding Wire pages, both caterers' food was not good! No flavor and one you could tell the appetizers weren't freshly made. Does anyone have recommendations for catering services with great tasting food? I am aiming for a budget of $3,000 for 100 people. Open to any suggestions/recommendations!
