Catholic and Pagan marriage?

I'm Wiccan and my boyfriend is Catholic and we are going through the same struggles. His family is conservative Catholic/Mexican. We are having struggles. I want to be married outside with the Earth under my feet and the sky over my head. He wants to get married in a Church (and churches make me physically sick). He wants to baptize our children but I want to raise them learning about all religions and let them choose. He also said that if we don't tell his mother they are baptized that she will take them and baptize them which I don't want. If you can figure this stuff out, let me know because we are at a standstill on stuff like that.

Have you been successful in this? I desperately need help! My FH says that if we don't tell his mother our future kids are baptized that she will take them and get them baptized! I know you need a parent's permission to do it, but if my FH was pressured by his mother he'd allow it. I don't want our kids baptized, and I don't want to have to lie about it either.

My FH is Pagan, and I'm Catholic. We're going to go through the traditional Catholic wedding for me, but a couple weeks beforehand, we're going to do a private Hand-fasting ceremony for him. We've just started with all the wedding planning stuff, so we've still got to look into details, but we're trying to accommodate both beliefs. He's been awesome with tolerating my faith, so I think we'll be fine with everything!
