My vote is ALWAYS for Canon in D I know it's traditional, but that song is so beautiful and what I've always imagined walking down the aisle to.
My DJ recommends Vitamin String Quartet for processional instrumental music, they do string quartet covers of popular songs!

We are using Canon in the D also. A Thousand Years is a good one, they have a beautiful instrumental version of that song.
