Cupcakes: standard or jumbo?

Ok so now that I've decided to do cupcakes in lieu of traditional cake, I'm on the hunt for supplies. It's fun actually, I rarely bake & since cupcakes is really easy I have faith i can make it great. But I'm stumped.

Most supplies are for standard size. I found jumbo size (muffin size) but wondering what's better. Each cake box can make 24 standard & only 12-16 jumbo, so with standard it's more for the money. But FH feels standard are so small & make people want to eat 2, which is true. I know when I've had one standard, I wanna go for another. Plus if we had cake, we'd slice it bigger than the typical size, which pretty much equals jumbo cupcakes. On the other hand, with jumbo, supplies will cost just a tad more (maybe only $20 on extra boxes, muffin pan, eggs, disposable stands etc)

    I would go with regular or even a little smaller so your guests can try a few different flavors. That is if you're making different flavors. If only one flavor, I guess bigger is better to get a more accurate estimate of how many you'll need. What flavor(s) do you have in mind?

    Oh yeah I forgot to mention that. We are doing red velvet, it's the only flavor we could agree on lol. Though I love betty crocker - Duncan hines has red velvet, B.C. doesnt. So if the red velvet doesnt come out to my liking, we are going w/ B.C. chocolate. But we never wanted to do different flavors. All the cupcakes same flavor, as well as our cake - doing a 6in, just small enough for the 2 of us, to do the traditional cutting.

    Then I'd go with a big enough cupcake to satisfy most people with just one. Definitely don't skimp on the icing. That sweetens em up and makes 2 too much most times.

    Oh yeah, I've already bought a Wilton Icing pump dispensor (michaels coupons, gotta love em!) to make it easy to decorate with style. Not too much, but I hate when cakes/cupcakes have barely any forsting on them

    Soon I'm gonna do a test run to make sure my "cupcake vision" works lol. I'll have to post pix when i do. *claps hands* ooh this is gonna be fun lol. I feel like a kid in a candy shop

    How are you gonna display them? I ask this because That may be a great size for people like me, but you may also get a lot of people wasting a big one because they don't like sweets a lot. Maybe if you are doing something tiered you could do regular and large so your guest can pick the more appropriate size for them, and save yu some money.

    Hmmm I like that idea, maybe do most of them jumbo (FH swears his family will love them) but also a batch of standard, for kids or others who want smaller. yes, that's a good idea.

    I found Wilton disposable cardboard stand (3 tier) holds 24 standard, so I'll have to make sure they fit.

    If they don't all fit on the cardboard stand, you could put some of them around the base on the table. Maybe do the jumbo ones on the stand (to keep them away from little kid hands)

    Yeah that'll work. Buy those cheap doily things from party city, lay it under the stand so the smaller ones can sit under.

    May I suggestion you consider making your red velvet cupcakes from scratch? Try a couple different recipes and see which one you like the best. So much tastier than a box mix! Had red velvet cupcakes from a box mix last week that a relative made and they were pretty yucky.

    I would do standard size. As heavenlyyoyo said, you may have a lot of wasted cupcakes if you do the jumbo size. Many people either do not care for desserts, or, will only want something small.

    On another note....I do not understand the trend of Red Velvet cake. So many people seem to love Red Velvet. I am not one of them, it leaves an odd aftertaste. See, if I were attending your wedding, one less cupcake needed. LOL!

    Kathy R....Funny, I feel the same way about Red Velvet. lolol Maybe it is just "old tart taste buds" lolol

    I would go with half and half. I would also fill the cupcakes with frosting.

    I have a big sweet tooth. HOwever, if I am drinking, I do not eat sweets. It just doesn't seem to go together. Are you going to have any "to go" boxes?

    I would make standard but for a different reason. Cupcakes can be really messy to eat, and the bigger the messier. Although in general I believe size matters when in comes to dessert :-)

    How many are you planning on making? I'm still wholeheartedly hoping you will change your mind about cooking.

    LOL, Carole. I will have to say, I had Red Velvet cake, for the first time, when I was in my early 30's. Didn't like it then either. Hee hee!

    Mrs S, I agree with you. I hope Masquerade changes her mind. Doing all of the cooking/baking can be:

    A) Exhausting

    B) Expensive (far more than catering in many cases due to having to purchase a full size something to make a recipe)

    C) Dangerous. Caterers are prepared to keep food in the safety zone (temperature-wise) and IF anyone gets sick, they have insurance to cover this. Do you really want your friends to send you their medical bills if they get sick eating food that you were not able to keep safe?

    Kathy & Mrs. S: I've weighed lots of options lately, and with homemade reception dinner as well as baking cupcakes, is half, less than half of the catering prices. We just cant afford the catering anymore. So this is the route we are taking.

    I know it'll be exhausting but I'm prepared for it, & the fun/excitement of it makes me feel energized to meet the challenge.

    Danger, I know all about it. I am ex-Army, my job was Food inspection. As in what the USDA does for the civilian world, I did for the military. I know all about food safety, 7 years of that job hasnt left me. So trust me, I'm covered on that. I believe I've got enough training & memory to keep the food temperature safe.

    Think of it this way, when people have a BBQ cookout for holidays, does the food sit out for a bit? Yes. Does anyone get sick? Hardly that I know from my experiences. Does anyone worry about the labor of cooking? No cuz it's a gathering, they're prepared to do the hard work

    MyLo loves cake/cupcakes. Along with cake, we are doing mini and regular cupcakes in red velvet, vanilla, chocolate, carrot, lemon and german chocolate.

    I am have cupcakes from a bakery. They do minis because apparently people love to waste jumbo cupcakes. They will take a few bites and be done with it. With minis they get the exact amount of cupcake they want. We are also doing multiple flavors and it prevents people from taking 4 giant cupcakes and eating a bite of each and leaving none for everyone else.

    I think jumbo would end up with a lot of wasted cake. If it's the same size as the jumbo cupcakes I'm thinking of, I can barely eat half.

    I guess this is unrealistic, but cupcakes at a wedding should be eaten with a fork.

    I have made jumbo ones before, and the middle barely baked while the rest burnt. Just a thought. I am doing regular sized ones. Smiley smile
