Deciding on a caterer

Hey All,


Could use some input on deciding on a caterer. I'm getting married in PR in 2022 at Hacienda Siesta Alegre. At the moment, a tasting is not possible due to COVID and because my fiancé and I can't get there in time. I'm itching to book the caterer bc if things continue to get better with COVID, it will be a CRAZY year for the wedding industry.

Anyways, both caterers have RAVE reviews. I love both their menus and they both allow for customizations. Additionally, both are pretty similar in price. The differences I am noticing are:

• Presentation: Both have great presentation but one caterer's presentation is more elevated.
• Amount of Food: The caterer with more elevated presentation has smaller portion sizes.

I will do a tasting with my caterer to finalize menu details but cannot do it before the contract is signed. What helped you decide on a caterer for your wedding? I want my guests to LOVE the food and be FULL when they retire for the night.

    This is tough. I wouldn't be able to pinpoint the exact food my guests will love. They all have different preferences

    Yes, it's very difficult! The good thing is most of my family loves Puerto Rican food so we are doing a homage to that with a few selections for people who may want something else.

    How "bad" is the presentation of the one with more food? Is it acceptable, but maybe not Instagram perfect or is it just thrown on the plate? If it's not terrible, I would go with the one with bigger portion sizes.

    Never ever book a caterer (or a venue with in house catering) without getting a tasting first. Do not rely on other reviews because their food tastes are not the same as yours. If a tasting is not possible, move on asap.

    I want to do a tasting but I would have to be in Puerto Rico and it is not possible atm due to COVID restrictions.

    The presentation is definitely not bad. I would say one is a little more rustic and one is a little more refined (he's a celebrity chef on the island so that would explain - but that has nothing to do with my decision).

    Ah ok, I would probably go with the one with bigger portions. At the end of the day, your guests probably won't remember the plating but they will remember if they have to go looking to food after when they're still hungry!

    Also, not always, but often times food from celebrity chefs don't appeal to everyone. They try to make things too fancy or make food have a unique taste so they stand out. (My FH is a personal chef who has cooked for celebrities and decided not to continue down that route to keep his style haha)

    Forget the stuff that’s on the scale now— these people are going to be centrally important to your day. Part of my decision on caterer was our communication— the one I chose always responded to me in a timely fashion, and always answered ALL my questions, and was able to go back and forth to make the changes that best suited us .


    If all that’s equal and it really is down to presentation v portion size — I don’t think you can really go wrong (doesn’t sound like a bad option around!) , but, consider these two thoughts re: presentation — #1. Most guests won’t remember or care. But if it’s important to You— consider, #2. Presentation is something that you can change— so it might be nice to go with the one where you can actually fix it to get exactly what you want. You can’t really change portion size, though you can always buy more food. But, if you want to up the presentation aspect, you might be able to work with the other company to be more in line with your vision ! (Note, might also be an upcharge here , for upgraded items [ex- fancier plates or different colored silverware])
