Diabetic Wedding cake

Does anyone know of a bakery who DOES know how to bake a wedding cake which will bake a diabetic cake?

We have been searching and it is unreal that bakeries do not have a 'recipe' for making diabetic cake layers!

    I'm guessing that one of you is diabetic. I don't know that you want to visit diabetic cake on your guests. FH and I are both diabetic and we wouldn't dream of serving sugar free cake at our wedding. We will both happily partake of a small piece. =)

    Could you guys maybe have a small piece of cake instead or have a "fake" cake and a real top teir for you and regular cake for your guests

    Hi, Amy,

    Actually your suggestion is one that we have been tossing around. Having the small top layer for my us (my fiancee is type 2 diabetic) and the remaining layers regular for our guests. There is no substitute for sugar-free frosting on cakes, but we can make a a concession for him and other diabetic family members on the layers. Thus, the need for a diabetic layer or cake...and, my man loves his sweets, so he will want more than 'a small piece' or 'bite' of it! lol

    I am so happy that sugar free cake mixes are now on grocery shelves. It helps keep my fiiancee feeling like an average guy he is who can enjoy his cake!

    Take my word for it, a true baker knows how to use a sugar substitute when baking and the guests won't know the difference! My first Thanksgiving of substituting Splenda r in our desserts asking several family members, "This sure is sweet! Did you double the sugar? "

    Which baker did you use? Three years later and we’re still having difficulty finding a baker who can accommodate our diabetic needs.
