Dinner Flow Help! Stations? Buffet?

Hi everyone! We are having a carnival themed wedding!! After discussing with our caterer we have narrowed it to sliders with fries, homemade corn dogs, funnel cakes, a taco bar, a meat carving area with mashed potatoes, and a fruit/cheese spread. However, I have NO idea how to set this up so it flows. I was wanting carnival vibes where you just walk around, play a game, grab a snack...but I can't get the logistics down. We're having a short cocktail hour, more like cocktail half hour. I was thinking maybe the sliders, fries, and corn dogs can be passed apps and the fruit spread can be out during the mini cocktail hour? Then have stations set up for the rest? I'm just so confused 🤣

    I would do it based on the tone you want to set at the beginning. When guests walk in for cocktail hour, the food would sort of set the stage for either a more formal atmosphere (carving station and fruit/ cheese) or a more fun atmosphere (sliders and fries, corn dogs, funnel cake, and taco bar).

    How fun, Kaala. I like Paige's idea on revealing foods at different times. Also, have you thought of a popcorn machine? That could be nice and light cocktail hour offering, or an all-reception nibble. How about cotton candy and funnel cake for the dessert segment (if separate)? i think you can also serve champagne with a cotton candy piece on top. Non-meat options are also an idea to offset the heavier options, but I can't think of any that are savory.
