diy cocktail Hour?

Katrina, on May 18, 2024 at 5:39 AM Posted in Do It Yourself 0 1
Getting married May 2025 and want to have really good food. Myself & my family love to cook, and always receive the highest remarks from others. The wedding is only 50-75 people and I was thinking about DIY catering the cocktail hour. We should have no problem with the prep and set up of the food for cocktail hour with the help of hiring a server or two to set up. But I’m also DIY-ing my signs, flowers & decorations…

We wanted to spend more on good quality things that we weren’t capable of physically doing, pictures, dj, main catering, hair & makeup for 10 people…
I put together an easy to make list of options… - antipasto cup - charcuterie cup-crostini bar -- bruschetta— tapenade -- whipped ricotta —smash avocado-“Her favorite” - my dads gumbo-“His favorite” shrimp cocktail
Myself and my family could probably easily whip all this up the day before and it’ll still be good to go the day of the wedding.
But is it smart to stress myself out? Would I stress more if I went with cheap options that were not up to par? Or is creating 1000 appetizers a day before your wedding TOO MUCH? *creating those apps with the help of at least a dozen people…

I'm planning only 5 appetizers per person for a 45 minute "cocktail hour" because they will be eating right after that.. You could do 3-4 kinds and prep two of them a month ahead & freeze them. I would do only 400 appetizers. I'm prepping ham/puff pastry rosettes and cheese puffs in advance and freezing them, then popping in the oven on the day. Doing deviled eggs 2 days before, plus cherry tomatoes & feta on skewers.
