Etiquette for food destination wedding

Hi! We are getting married in Jamaica on December 10. My fiance and I rented out a villa that we as well as 14 other people will be staying in. Check in for the villa is December 8th at 4 PM. We have a few people who are arriving on the 7th and will be staying at a separate hotel for that night until they transfer to the villa. My question is this. What is proper etiquette for providing meals for the people staying in the villa for us? We have said that we would cover meals through a personal chef that works in the villa, however we also understand that certain people are picky eaters (fiance and I eat plant based) and I think some people might not want to eat the food. Also, everyone is arriving at different times on the 8th, so I'm not sure how we would plan dinner for that night. I also know some people might have other plans to go and do their own thing or might want to go eat out at restaurants. We are having a rehearsal dinner on the 9th and we also have pastries and a cheeseboard for breakfast on our wedding day and then obviously our wedding day dinner will be provided. Should we also cover dinner for the 8th and/or breakfast and lunches for the 9th? What would you prefer as a guest? Or how should I approach this?
