Everyone's favorite topic: The bar

Here are my consumption bar options (no unlimited options). Sorry in advance (lol) but would like feedback on choosing best option. Trying to keep cost down but make sure everyone has a good time.
120 guest total.
Beer is $9, Wine is $15, Signature drink is $10, and Soft drinks are $7.
60 guests are heavier drinkers and the other 60 are average.
Bar will serve for 4 hours (excluding dinner).

1) Bar option: Beer, Wine, (1) Signature Drink, & Soft drinks
2) Bar option: (2) Signature Drinks, & Soft drinks
3) Bar option: Beer & Wine only

If you can think of other doable combos that could work for reception, I'm all ears. What did you do/are going to do at your wedding? How did that work out for you? Did you notice an influx in drink type over others?

Also, consumption bar is best for me and I won't be doing a hosted-unlimited bar option, and I'm not here to debate why.

    I would do beer, wine, and soft drinks. You want to make sure there are beverages for people who don’t want something alcoholic. Beer and wine is mostly universal, as most people will like one or the other. Finding a signature drink that suits everyone’s tastes can be difficult.

    Personally I d go with option 1. But you know your guests best and make sure there’s something you and your partner enjoy. Best of luck.

    I would go with the first option. It gives the best chance of being universally liked and having some thing for everyone. It sounds like you have a pretty good handle on your guest list’s drinking habits. Do you know what specific drinks/type of liquor they enjoy? If so, perhaps you can make the signature drink something that the most amount of people would enjoy (especially for those who do not enjoy beer or wine).
    We did a top shelf open bar at our wedding. We mainly did this because over half our guests (including myself) do not drink beer or wine, so we wanted to make sure there was something for everyone.

    As long as you’re paying for this there’s nothing whatsoever wrong with limited options, either in terms of what’s offered, duration of time the bar is open or both. I would, however skip the signature drinks if you are limiting them to one or two at the bar. How would you even enforce that? I’d either serve them butlered during cocktail hour or skip.

    You have to ask your guests who are attending what combination works for them. Every group is different and there is no one size fits all. Some people drink beer/wine only and don’t touch liquor and others won’t touch beer/wine at all but they may not like the niche signature drink you picked. So something will be wasted regardless unfortunately. Some type of nonalcoholic beverage needs to be offered no matter what type of alcohol is served.

    I would definitely not do option 3 if there’s no soft drinks included. Even people who drink might hit a point in the night where they want to switch to no alcohol. And a lot of people don’t like beer or wine, so then they’d be left with nothing to drink. Option 1 has the most diversity and likely encompasses everyone on your guest list.
