Guestbook size?

I'm designing my own guestbook on Snapfish (or Shutterfly) depending on price. We are inviting ~230 guests and expecting maybe 175.
We are adding mini envelopes inside the book and having guests sign a blank card and sealing the envelope closed with a heart sticker. The envelopes are about 2.5 x 3.5 (OR SO). I haven't ordered them yet just in case.
I started designing an 11x14 layflat book. Every other page has one page with a large photo of us from our proposal photoshoot OR our engagement photoshoot. Then there are two blank pages on the following page. Then the next page has a photo of us on one of the two pages, etc. There are 20 pages.
I'm not sure if this will be too big and we should go for the 8x11?

It sounds like the envelopes are going to take up a lot of space, and I'm bad at math, but will you have enough envelopes for couples to all have one to put a note in?
I think it's easier and more space efficient to skip the envelopes and let people just sign the book.

I saw it at a wedding recently and I thought it looked super clean and was a different, unique style guestbook. They sign a blank insert and put their well wishes into the envelope and seal it for us to read later on.

What a cute idea! This is such a nice way to include your guests in your marriage memories! Have you gone to look at different size guest books in person to get a better feel for what you're looking for? Do you know yet how you'll be decorating the rest of the table you will be displaying the book on? I personally like the idea of the larger size because it will really show off the gorgeous photos of you and your future spouse.
I think you have the concept down pat, and whichever way you decide to execute it will work out beautifully!

Just realize you will not need an envelope for every single person, as couples and family groupings will probably sign on one card.
