When do I start doing the trials? Especially for my hair?

I want to keep my hair simple but not too simple. If that makes any sense.

I would say anywhere from 3-6 months ahead of time.

I would recommend around 2-4 months out! That way, there's still plenty of time to do another trial if you're not happy with the first one, and it's close enough to your wedding to where you know what style you'd like to do.

My hair stylist told me 2-3 months beforehand. So I booked my trials for July 5th and my wedding is September 17th.
