Halibut at a buffet?

Hello,


My fiancée and I are making our buffet menu choices right now and we’ve chosen a couple hearty dishes that we think would keep well being served buffet style, but were wondering if fish being lighter would get soggy or over cooked too easily? Did other people have fish served buffet style? Did it keep well?

    I wouldn't include cooked fish on a buffet.

    Chicken, beef and a vegetarian main would be sufficient.

    Thank you for the input. Our venue had three different fish options, but we are also their FIRST wedding, so we know they are probably learning as they go.

    As a chef I’ve done fish on buffets. If done correctly it wouldn’t be bad, sauce is going to be key and making sure they don’t overcook it. Beef could just as easily be overcooked unless it’s a braise.

    Would salmon hold up better? There was salmon on the list, but it came with a mustard sauce while halibut came with ratatouille and I’m not a mustard fan. On the other hand, I’ll probably end up eating the chicken anyways but was considering getting a fish option for guests that prefer fish.

    You could ask them to get the salmon without the sauce. but if it were me I would have beef and chicken instead of chicken and fish.

    Salmon holds up the best probably. We are doing a salmon option for the buffet. I have seen at my friends wedding crab stuffing rolled with a white fish (possibly tilapia) and it seemed to hold it's shape fine in the rolls. Additionally, if you don't like the mustard you can always ask for other options and they should accommodate you. I hate chipotle sauce and that's one of the options on the veggies and I know I won't like it. So I'll probably replace it with something less strong. We basically have to choose fish and chicken because the beef options are out of our budget.
