I found this pic on pinterest. It's a salad bar but I bet it could be done for a taco set up as well.

Thanks guys. I figured it was the pefect combo of inexpensive and accomodating (we have a couple gluten intolerant people and 4 vegetarians)

Hey vegeterians~what you put on your tacos, taco salads, fajitas? Do I need more than:

Corn, 2 types of beans, bell peppers, onions, lettuce, all the norms?

I think you are good with the 2 types of beans and other fixings for vegetarians. Beans is a great alternative.

If I'm doing vegetarian burritos/tacos/enchiladas I usually do a mix of bell pepper, onion and mushroom. Then all the other toppings can go on after that (lettuce, tomato, avocado, cheese, sour cream). I would also add mexican rice. It's a good filler in addition to the beans.

We are having a taco bar as well, and our caterer suggested vegetarian chili as a vegetarian option. He made it for us and it was yummy!

I am seriously digging this idea. Now how to convince DH to incorporate it into the christening party we have planned
