I need Taco/Fajita bar/buffet pics. Update~Vegetarians: I need your help

It looks as though my caterer and I had a miscommunication. When I told her my plan she thought I meant that i wanted something super simple like ground beef and lettuce and then still a full buffet set up of roast chicken, roasted veggies, mashed potatoes. We want a full out taco bar with a ton of options and thats it. I got my ideal menu together for her but i want some inspiration pics to show her what im envisioning. I googled it and came up with a few but i wanted to see if anyone had anything different.

    I am a vegetarian and I always use beans instead of meat. You can do faux meat crumbles, but some vegetarians are weird about eating that stuff. Rice is also a good filler, as Kimberly suggested.

    Instead of doing soup… do a salad. A nice, simple, crisp salad with pepitas and tomato with a creamy cilantro dressing would be an awesome addition. Soup is hard because it requires bowls. Logistically it's more challenging. I would also put chips & salsa at each table for snacking. You could also include tamales or enchiladas to the spread.

    What are you thinking of a Mexican potato dish?? I've never heard of or seen one before.

    Kimberly~we are having taco salad bowls on the buffet, so that we kinda be redundant. The venue has the bowls and their regular menu includes soups. I like the idea of that salad dressing tho-I'll talk to the caterer.

    I going to think about the enchiladas, its not like they are hard. She prob wont have a problem. Tamales tho? Idk......

    Potatos: i was thinking about this: whipped red potatoes, four cheeses, red and green peppers, sour cream and the perfect touch of garlic and jalapeño. Or a sweet potato recipe I found.

    Celia-did you read the menu list? Now Im kinda nervous, bc I thought I had covered all the bases? what would you recommend i add?

    Roasted sqaushes with chickpeas are great for a vegaterian/vegan alternative, and Mission brand corn tortilla's are gluten free and a really decent price

    I have thought about this idea in the past as well....im a vegetarian and sensitive to gluten so it sucks looking at menus of yummy food and thinking...well the guest will like it but im SOL lol. This sounds so yummy! I usually use corn rather then flour wraps and stuff them with rice and all the yummy veggies you have listed. Just out of curiosity how much is your catered charging per person for this..? We are on a budget and would love to get an idea of what the go rate is for this kind of set up.

    BTW instead of meat I usually go with black beans myself...im a little weird about the veggie "meat" crumbles. The added expense may not be worth it when you are already providing SO much. If someone cant be happy with all that you are providing already...they probably arent going to be happy. JMO

    Mags: that is one major reason we went for this. I have several gluten intolerant guests and several vegetarians, I thought this could be something everyone could personalize. We are having both flour & corn/hard & soft.

    she still needs to get the final figures to me but she's talking about 15 a person.

    im soooo not getting the meat crumbles. i know several people who just dont care for them.

    I would say stock up on the rice as some vegetarians (myself included) can't digest beans properly. All the other veggies should be enough with the rice. If I was there, I'd make a plate of rice and veggies Smiley smile

    OMFG that sounds friggin delicious. Why did I open this post? I knew it would make me hungry. Dangit!

    I am gluten intolerant and I would have a field day at your wedding. Mexican/Latin American restaurants are hands down the easiest places for me to eat these days.
