iso Reception Ideas for a Sunset Beach Ceremony

Our August 2021 Florida beach wedding will be a sunset ceremony. According to our planner, after the ceremony and pictures are over, we will be done around 8:15-8:30 in the evening. My first thought was to invite all of our guests (around 30 as it’s a destination wedding) to a restaurant afterward for food and drinks (private room), but now I’m beginning to think that it will be too late in the evening for dinner. Wondering if anyone else has had this same kind of situation and what you all ended up doing. Still rent a room and just do apps and drinks? Brunch the next day? Food trucks? Something else? Doing nothing is not an option as we want to do something to celebrate with everyone who is traveling for our wedding. Thanks!
