Late Night Snack - How Many??

I am hoping to do late night snacks at my wedding, but I don't want there to be a ton left over from people not eating. My venue says we have to pay a minimum head count, but if we don't reach that, we can use that extra money for other things like the late night snacks, so this would only be if like 80 of our invited guests declined! The venue said we can pay for as many people as we think we would need, so thats where I need your help! Especially if you have already had your wedding and experienced this. We are serving dinner at 7, and would do late night snacks about 10:30. How many people would you guess would still be around and would partake? The reception goes till midnight and it is at a hotel so most people would at least be staying in the building.

My guess is do tacos enough of 60 people and when they run out, they run out!

Any help or guidance would be appreciated!

    Were doing a late night snack, our caterer suggested donuts or Krystals, we decided to do krystals

    And we are anticipating about 75 percent of our guests being around at that time

    We thought about doing late night snacks but our caterer talked us out of it. He said not enough people usually eat them to make it worth it. If you do decide to do snacks the caterer should help you decide how many you need for your guest list.

    Do you have other options of what you can use the money on? Dessert bar? Upgraded bar services?

    My cousin had a wedding of about 125, almost everyone showed up. They had a super long (to me) reception,4-10pm, and had in n out fries as a late night snack. Maybe 10 people ate them.

    When does your reception actually start? I can't imagine a whole lot of people would stick around until the end of it's super long. But if you want to do the late night snack I would do appetizer/pub type food. Like pizza bites or chicken fingers or something.

    We had a dessert buffet (cookies, mini pastries, and such), after our dessert course was served, and guests grabbed a piece, when they went by. It was completely gone, when the last guests left.

    I can't eat heavy or spicy food late at night, like cheesesteaks, pizza, etc.

    I would provide one for every guest. There is no way to predict how many will remain and it would be a shame to run out before every guest who wants one got one.

    We're doing a grilled cheese truck at the end of the wedding for a late night snack. There is no min or max on how many there making we just pay a flat fee.

    We are planning on doing sliders as our late snack. The other thing we are considering is a hot dog cart on the way to the parking lot. They have a higher end company that has really fancy looking carts.
