Less Sweet Wedding Cakes

Alisha, on April 14, 2020 at 4:11 PM Posted in Wedding Reception 0 16

Hello ladies,

I am stuck on the wedding cake selection. My FH and I both don't like sweets, but we both would like wedding cake at our wedding. Most of the weddings cakes we had (at other's wedding), are usually very sweet, and the icings are too sweet to eat.

Wondering if anyone had the same issue we had? and what type of cake and icing did you choose to avoid this problem?

PS. I am thinking about buttercream. Trying to communicate with my baker on adding less sugar, but we are worried it will ruin the flavor.

Thanks! Be Safe and Stay Healthy!

Even my local Whole Foods are able to take my order with 50% less sugar. As your bakery, and tell them your concern. If they are experienced, they know what they need to do without ruining the flavor.

I grew up in Europe and I love their cakes, because.... it doesn’t taste like I am eating a bag of sugar!

I agree! It tastes like I am eating bag of sugar! Sometimes when I eat icing, it actually hurt to eat because it is so freaking sweet.

I grew up in Taiwan, and the cakes I used to eat were Japanese Sponge Cakes with icings that tests like Reddi Wip Cream (so smooth and less sweet).

I have talked to my baker, for some reason she seems to not liking the idea of me reducing the sugar, and she is suggesting the icings you find on the supermarket cake. Currently rethinking my decision on the baker lol

If you can find an asian bakery, those are significantly less sweet than a traditional american cake. OR maybe even think about those naked cakes where you have minimal amount of frostings?

I was also going to suggest a semi-naked cake! I feel like they fit well with most themes.

Are you dead set on cake as the dessert for your wedding? We were given a lot of cool inspo from our venue for dessert tables & I think we're gonna do one. However, we're big sweets people so we'd include a good variation of our favorites. Would you possibly consider doing some sweet & savory treats that both you and your guests would enjoy?

Asian bakeries typically sell chiffon cakes with a whipped cream frosting. Such cakes usually use less sugar.

Buttercream tends to have more sugar

If you want buttercream, try either Swiss Meringue or Italian Meringue buttercream. They're less sweet.

I hate all things sweet! We ended up doing a dessert bar with a lot of options. However, I still wanted a cake for cutting! We did a 2 tier cake with cinnamon brown sugar cake with cinnamon buttercream frosting as 1 tier. It was to die for! Not too sweet either! We also did a fresh strawberry with vanilla buttercream. It was sweeter than the other, but still not terribly sweet.

Most bakers will accommodate you. Get tastings to see which ones you like before settling.

I am very sensitive to sugar, so I feel you!

We ended up going with buttercream icing, as well as dark chocolate for the filling, which cut the sugar.

Talk to your bakery - they should have lots of flavors and other tricks to help with this, as it is a dietary concern for many people.

We will most likely do the same! One small cake for us to cut and then other desserts and possibly cupcakes. Can't wait to see what you decide on once you meet with a bakery!

You could also do something with seasonal produce - Our bakery does a modern twist on a strawberry shortcake that looks elegant. Berry/lightly iced "naked" cakes are also a thing.
