I enjoy the LOTR books & films so I think this is a really cool idea. My only advice would be to make sure the themed decor looks cohesive when put all together. Table cloths would look better if you stuck to one, or maybe 2 colors, so that the room doesn't look to busy. You can use table runners or cloth napkins to tie into that tables specific theme.

For favors, this is a know your crowd thing, but I would leave the wine glass and ring there and only take the cookie. I just got rid of all my mismatched wine glasses and upgraded to matching sets so I would not be interested in taking one home, however I would drink out of it for the night.

Food sounds great, I would suggest doing at least one of the desert options as something more typical since not a lot of people like lemon (I love it though!) or apple flavored desserts.

The tables will all be white cloths with blue runners and napkins

What about a family-style dinner on farm tables? We did this for our pirate reception and it was awesome. It could work well for LOTR too:

Just FYI, the wedding day is a blur. Most guests won't notice the details. Focus on big ticket items: table centerpieces, seating chart, guest book table, table place settings. In our wine cave, we decorated four alcoves with unique decor which included things like a big of wood with our names stenciled onto it and a weird old photo which actually had my hubby in his theater days--nobody noticed! Some people didn't even notice our Disneyland Fortune Red place cards-which were on their plates. But they were wowed by the overall look which included a few life-size skeletons, orange-red uplights, wine barrels, life-size treasure chest, accordionist and bartender who dressed like pirates, and of course the amazing wine cave complete with an authentic earthy smell.
