- Spend a weekend in Toronto with a nice hotel, nice restaurants, and some theatre tickets

- Visit the Scandinavian spa in Collingwood and make a relaxing weekend out of it

- Head to a quieter part of Wasaga Beach

- rent a cottage in the Muskokas. Won't be too cheap though

You can have fun anywhere. Just make it a point to do something you haven't done before and to stay somewhere nice and romantic I think I would choose Niagara on the lake

Sometimes it depends on time of year too. You could look up specific festivals and other fun things going on. There's a lot of scenic places. There's certain places that are more geared towards entertainment and nightlife. Depends what you want to do I tried to add a brief description next to each.

There's also so many nice resorts in random places that you should look up resort deals and then try to find out what local attractions are nearby if you want to go exploring.
