Your hair is beautiful, I'm not sure if you thought about hair accessories but I could see one side pinned back and your curls free flowing similar to this image;

Also if you wanted more length not that you need it but they do have clip ins that would match your hair texture seamlessly. My best friend was just like you had recently did a big chop a year before the wedding we ordered her clip ins so she could do the pin up she really wanted... best part about it is after the wedding they come right out lol here's some below... I like better length, curls curls and her given hair.

Those curls look really nice as is. If you feel there is an asymmetry, the hairpiece pulling up your hair on one side can make the asymmetry more intentional.

Hey fellow October bride and curly girl! Beautiful hair. Depending on the vibe your going for there is a lot you can do. If you want a more boho look you can leave it down and add a flower crown, or leave it down and add little baby's breath hair pins all over. If you're going for something more sleek or modern you could also slick it back with a middle part and add a ponytail extension that has the same texture and curl pattern as your hair if you want some extra length.

This would be super cute with a headpiece - good if you wanted to have your hair out of your face but still let your curls pop!

I've been going back and forth between an updo and wearing it down but I think I've finally settled on doing a half up, half down look and then hair spray the heck out of it because I live in Florida and it will still be hot for our outdoor ceremony. Although my hair is long it's kind of thin so I'm hoping it will still work. This is my inspiration:

This may sound strange but, if I was in your shoes, I would consider showing your stylist all the elements of your wedding that you have planned: Dress, venue, decor, shoes, ring, etc.
Then I would show them elements from your day-to-day inspiration/wardrobe: Jewelry, favorite items, how you part your hair, photos that you've come across for style inspiration and why you like them.

After that, I would walk in with an open mind or with the elements you know you want in your hair: veil, hairpiece, flowers, and go from there. Nothing says the hair trial has to end in a final decision.
