Night before the wedding

We have a resort booked for our wedding. Our guests filled up the resort so it's ours for 3 nights. It has a big grassy area under the aspen trees that we are using for a night-before-the-wedding party. (photos of this are are included) We are going to be doing dinner for anywhere from 50 - 80 guests that night. Sigh...! Its a lot of stress, but it's already been announced on emails and on our wedding website. It's going to be BYOB, but we are supplying dinner. I'm looking for suggestions for 2 things.

1. What is an easy dinner to serve that doesn't require bbq-ing. We have 2-3 stovetops and ovens.

2. The theme is Hawaiian shirts. I HATE that! But my hunny used to wear a lot of Hawaiian shirts... until I told him that it makes me feel like I'm dating an old man. I can't help it, they are just ugly to me. Anyway, he loves it, so that's the shirts that everyone is wearing. So I am decorating with somewhat of a tropical theme. I have silver mercury glass candle holders in all sizes and I am doing white table cloths with teal runners that I am making. I need help in thinking of ways to make that tropical but elegant and classy without spending much money at all. This is going to cost on top of the usual wedding costs and I wish we hadn't done it! NOT tacky and loud. I mean, not with paper pineapples and tiki torches plastic Hawaiian flowers.

    Outside of grilling, I don’t see what you could possibly make with only two ovens/stove tops for 50+ people. I feed 25 people on thanksgiving and I use all 6 of my stovetop burners, three crockpots and my double oven.


    For decor, could you just do some flower petals around the vase? I’m not sure how to keep decor cheap for a big party except for maybe skipping extra decor altogether.

    Can you cater in something like a taco bar or Mexican food?


    I'd look at Party City or Walmart for subtle Hawaiian touches like small hawaiian flowers or small candles or shells.

    You can make a lot of pasta pretty inexpensively using just stovetops and ovens. Not the classiest of foods but I cannot think of much else that could approach feeding that amount of people without more space. We fed a dozen people using 4 burners and serving a salad, pasta (gluten free and regular), meatless sauce, and gluten-free, dairy-free meatballs that were prepared in advance. If you had less dietary restrictions you could feed the same number of people with less space (or more people with similar space).
