We also aren't religious so no default pastor. What we decided, and another girlfriend did this for her wedding, was to have a family member perform the ceremony. NC does not recognize online ordinations, so this wouldn't cover the legally binding part of the wedding. We are going to do a simple courthouse ceremony when we get our marriage license so the legal part will all be processed prior to our wedding. That way, whomever officiates our ceremony will just be doing the memorable part and we won't have to deal with any legal logistics that day.
