I am trying to decide on a theme for mid-August- I really like boho. Anyone know if Pampas grass is "okay" to use in August?

Why wouldn't it be? It will look great especially for a summer wedding. Ask your florist if it's available in August and how much it might cost!

I think you can definitely have pampas grass at a summer wedding! It's super neutral and can work in any season. Here's some inspiration I found that I think could definitely work for the time of year you're getting married!!
