THAT cake looks marvelous, but in reality, a pancake station is your best bet.

Neither pancakes get soggy and cold real fast. I'd opt for a waffle bar where the waffles are made to order.

I think ideally a pancake station would operate like an omelet station and there would be someone cooking the pancakes constantly so guests could get pancakes fresh and hot off the griddle. I couldn't find a picture of that, though.
