picking an entree/more than one?

We had a tasting that was held by our venue in November, they offer two caterers and many different meals from both. I think we nailed down which one we want (more options), but now we are having trouble picking entrees. I will admit not everything was fabulous even though they are 5*. But the food is different from what my FH and I are used to. Our family and friends are all from small towns and are more of meat and potatoes people rather than fancy salmon with a crazy sauce on it.

We are having it plated, but there isn't two options (we didn't have the chance to try every option-there is about 15 different entrees) that we are completely in love with.

What do you think about doing one meal, we were thinking ham or we tried this really good pork. Or should we do a chicken dish? We will also have apps during cocktail hour, salad, a huge dessert bar, smores for by the fire, and late night pizza. With all that going on do you think it would be okay to do one entrée?

    Do you have a vegetarian entree option? Having just one might be a little tricky, you'd have to pick something that appeals to a wide variety of people. Some people don't eat red meat, so chicken may be the best bet. What sides will be offered?

    Maybe an UO, but I do think it's okay to have one meat option and one vegetarian option.

    I personally feel like there should be an option available; not everyone likes or can eat ham or pork. Does the caterer have a "Signature" or "Specialty" dish? Over the years, I've found those dishes tend to be delicious - maybe you could find one of these plus the ham dish? Alternatively, could you work with the caterer one-on-one to develop a personalized meal selection? Some caterers will do this at no extra charge (provided you work within what they can do), although you'd have to check with them on that.

    I love pork, but if you are going to try to appeal to most of your guests and you only want to choose one option, then a chicken dish is the best way to go.

    We are doing one beef, one chicken, and one vegetarian option. I think it would be much more difficult to only have one option, especially if you do have a vegetarian guest. As @Steph said, you might be able to get away with one meat and one vegetarian.

    We are doing Tri Tip and Chicken. You have to know your crowd. We do not have any vegetarians in our group or we would have that options but not enough of my family eats pork and likes it to make it an option.

    Ours will also be buffet style and the guests get to have both options rather choosing one or the other

    A wedding I went to last year had one entree and that is what everyone was served. Another wedding had a food truck with sliders. Another wedding had a buffet. It's all what you want to do and you know your guests better than anyone. If I could have the option to include 2 entrees, I would go with that though.

    I think for a plated menu, having at least two options plus a vegetarian is ideal. We are doing filet mignon, salmon, and vegetarian/vegan. Personally, I don't eat pork at all, so ham or pork would leave me starving. Have two options!

    @MrsWrs, yes it is more expensive for two options and to be honest no two options really appeal to us. We can get vegetarian upon request, yes. As far as my family and friends, they really aren't picky eaters.

    We will be having a house salad, fresh dinner roll, some kind of potatoes, and mixed veggies.

    I think our group of guests will not be hard to please and most weddings we attend don't have much for food, usually a family style dinner or buffet with beef tips and/or chicken.

    There is three vegetation choices to pick from and I am mainly doing online RSVPS and will have a place for people to comment any restrictions or dietary needs. I think at that point we can further see who we need to accommodate.

    I personally hate most cuts of pork. For a plated menu i think you need at least 2 entree options and a veggie option. We are doing plated and have beef, chicken and veggie options

    Thanks everyone, this is what I was afraid of. I know not everyone likes one type of meat! I will really reconsider this! I like hearing your opinions, I am stubborn and really can get stuck on one way.

    I would probably do chicken if your only doing one, some people don't like pork. As long as your offering a vegetarian option it should be fine. I have been to a few weddings with only one option. I'm a picky eater so at one of them I ate potatoes for dinner but that was my choice. Its still considered properly hosted you might just have a few unhappy guests.

    @MNBride, I do agree with you. I can tend to be picky also. . . We are trying to accommodate everyone by still providing a great meal! and with so many options of different foods throughout the night I hope anyone that feels that dinner was terrible can fill up on something else.

    We will be having pizza from the new wood burning pizza oven they have installed outside, super awesome touch and the pizzas are delicious. Those will be served around 9

    Here's the thing; you're not eating every meal. And I wouldn't offer ham as a single entree; there's the pork thing, and frankly, ham is just not that compelling an entree.

    Pick a beef and a non beef. If you're going to do one thing, do chicken. Practically everyone loves it, but on the flip side, everyone eats it multiple times a week.

    Here is some of the choices:

    $ - CHICKEN SALTIMBOCCA (G)

    Chicken breast with prosciutto ham and fresh sage

    $ - CHICKEN PICCATA

    Thinly pounded chicken breast, dusted in flour and pan fried with a lemon caper white wine sauce

    $ - HONEY STUNG CHICKEN (G)

    Brined in a salt and sugar solution the marinated in clover honey, jalapeños and dijon

    $ - HERB ROASTED CHICKEN (G)

    Brined in a salt and sugar solution then marinated in herbs, dijon and garlic

    $ - BEEF SKEWERS (G)

    Skewered beef with red onion, green pepper (sweet soy glaze optional)

    $ - DIJON AND ROSEMARY ROASTED PORK (G)

    Served topped with apple cranberry chutney or baked granny smith apples

    $ - ROOT BEER GLAZED HAM (G)

    Slow roasted ham with a reduced root beer glaze

    We are doing a buffet with only one meat option (roast) but also doing a pasta as another entree option (either butternut squash or lobster ravioli).

    I enjoy ham, but I wouldn't order it or serve it at a wedding. It's a really, really casual food. It's also super salty and made of pork, both of which are pretty common things for people to avoid in their diets. I would go with one of the chicken options and the roast pork. Ordinarily I would vote for beef over pork, but the beef kebabs also seem like an odd choice for a wedding.

    Definitely give your guests options, though. Everyone wants at least some degree of choice in what they eat.

    I'd do that too; the roasted pork and any one of the chickens, probably the saltimbocca. I love that and it's not like most people are going to make it at home.
