We put: John Smith + Guest on the invitations

I don't know specifically if you're using Wedding wire, I used Zola and under each guest there, I could add a guest and it had a check box if i didn't know their name. We had online RSVP as an option and when they rsvped they were asked to put in the name.

We used WW for our website/ guest list. There's a way you can link guests together so when the guest types in their name on the website the linked guest will also pop up. I think the place holder we used was to list "Guest of John" as the first name and "Smith" as the last name so that the last names would be searchable.

On ours I linked it to the person's RSVP and made the name "Eric's Guest" based on who the person with the plus one was So now if Eric searches his name, his plus one's rsvp will show there as well and he can mark them both accordingly!
