Does anyone know if I can register somewhere that won’t disclose the wedding date online ? Or a private registry I can only have my guests access? TIA

It may be possible to have a wedding registry that is only accessible via a link as opposed to your names and wedding date open to the public. I believe Amazon may have this option!
I would recommend you reach out to companies to see if this is possible. I'm sorry I don't have a more specific answer for you.
