I think the average number is 2-3. Usually you pick people are special/important to you, but aren't necessarily in the wedding party. You also want to make sure you pick people who are comfortable with public speaking.

We have three. We tried to pick people to represent each family that were comfortable speaking in front of the group, so we have a family friend, FMIL, and FH's aunt.

I'd check with your officiant. We had only one reader at ours. But some churches will have a fixed number of readings (e.g., one from the Gospel, and one from the Epistles), so you'd want to keep that in mind.

Catholic mass so we'll have two. One will be one of my brothers, the other will be one of FH's sisters.

We are having 3 people "reading". One is going to be reading the Intentions right after the prayer of the faithful. Depending on your church/officiant this can be read or left out.

A Catholic mass has two official readings, can both be done by one person or two.
