Reception Food troubles

My fiancé and I decided on a menu that we love (we had our first tasting already and everything), but I'm starting to worry that it may be missing something and I'd love some advice before it's too late!

We're pretty non traditional and have chosen to do:

1) Mini sliders as our appetizer with fries and small glasses of a locally brewed beer, one of each per person.

2) Tacos for the main course - 3 per person, plated, and served in these metal servers below:

. The taco choices will be grilled marinated beef, chicken, shrimp, and something for the veggie eaters.

3) For dessert we're serving individual molten lava cakes with raspberry sorbet, and after that we'll be serving our wedding cake (princess cake, a classic here in Sweden) with coffee. Up until a few days ago, I had been feeling confident that this would be enough food, plus all the alcohol (we're having an open bar), PLUS salmon wraps at our cocktail hour. But now.. I don't know. Is it weird to not have any sides to the tacos? Like a salad or even chips and salsa?


My mom has been suggesting adding a salad or just simply some kind of a "vegetable dish", but I don't really know where a salad or even a veggie dish would fit in with our concept. I think she's so used to the typical wedding food menu of protein/starch/green that she's having a hard time wrapping her head around us having such a non conventional menu, but I can't help but feel guilty because she's my mom and I want her to be happy like the rest of our guests. My fiancé keeps saying it's our wedding and that people will just have to deal with what we're serving which he is right about, it IS our wedding.. but I don't know. Appreciate any advice!     I don't think it necessarily needs to be a vegetable, but as a guest, I would prefer a side. I'm not a big fan of eating the same flavor/texture bite after bite after bite and like to break it up with something in between. Beans, rice, or chips and salsa would be a good addition if you want to add something. If not, I think you're okay with what you're offering.

    I agree with PP, rice and beans or chips and salsa/guacamole would be a good choice for a side dish and relatively inexpensive to add! I just got back from Sweden - such a beautiful country and I love the food!

    I would add something! Also just throwing it out there- I'm not picky at all but as a vegetarian, it kinda sounds like any vegetarian guests would be left pretty hungry. Some fries and 3 tacos may not be overly filling. Maybe add a taco salad with either no meat or optional meat?

    Oh we've been very conscious of the vegetarians - they'll be getting veggie sliders! Smiley smile I like the idea of a taco salad though - gonna bring that up with my fiancé and see what he thinks - thank you so much!

    I would also add rice and beans. Cheap typically, and good to soak up some of that alcohol.

    Maybe mini grilled Mexican corn on sticks (it’s like a half ear)? Rice/beans or chips/guacamole or queso would be good too and substantial as a side (almost like a build your own nacho bar)

    Are you doing basically fajitas for the vegetarians? That's what I would do. I'm doing a taco/ nacho bar. We will have beans and rice and chips with salsa/guac/pico. I would definitely add at least chips.

    We're doing a taco bar but hoping to do a nachos and chips and salsa option as well. We may add rice too. We haven't met with caterers yet.

    You guys are awesome! We have decided to go with chips, salsa and queso (my fiancé's request - he's been obsessed with it ever since we had it at a tex-mex place in Los Angeles we love called Homestate, lol). I looove the idea of the mini elotes but I think we'll get by just fine w the added chips, salsa etc. Thanks again!

    I'm not sure what the chef is planning for the veggie option, but i am going to suggest fajitas when he comes back to us about the changes we made to our tacos. Thanks for the suggestion!

    I think it's fine as is. Adding anything else would just seem like overkill.

    Is there a side with the tacos? I think one is needed. My fiance would starve to death if 3 tacos were all he was served for dinner.

    Haha, I know what you mean. Truth be told, both of us have changed our diets for the wedding, so I think our ideas have been a bit skewed since we eat less than most people right now and get full so fast, which was what made me become worried. I will say, though, after eating the slider and three tacos, it does feel like quite a bit of food. Regardless, we wrote to our chef to add on chips, salsa and queso, so that should be enough now. I may still suggest adding on mini elotes as they're so cute and yummy, we will see. Smiley smile

    I'm glad you are adding chips & salsa & queso. I just would think of it as a traditional wedding. Most weddings I've been to have 2-4 appetizers during cocktail hour, most with meat (so filling), a salad course & bread on the table, then an entree course with two protein options and 2-3 sides. I've been to weddings that didn't serve traditional food, and they still followed the option of 2-4 appetizers, a beginning course (soup, salad, etc.) and bread on the table (so chips being a good option), then the main entree having sides.

    We will be having a few different types of wraps on our cocktail hour boat ride (plus champagne), before we have the sliders (both beef and vegetarian options)/fries/beer as our appetizer at the reception. Should have mentioned the wraps earlier! Once we go for our second tasting we'll try to pay close attention to whether or not to add anything more now that we'll have the chips, salsa and queso, but it really does feel like a lot of food when eating it.
