Reception Food troubles

My fiancé and I decided on a menu that we love (we had our first tasting already and everything), but I'm starting to worry that it may be missing something and I'd love some advice before it's too late! We're pretty non traditional and have chosen to do: 1) Mini sliders as our appetizer with fries...
My fiancé and I decided on a menu that we love (we had our first tasting already and everything), but I'm starting to worry that it may be missing something and I'd love some advice before it's too late!

We're pretty non traditional and have chosen to do:

1) Mini sliders as our appetizer with fries and small glasses of a locally brewed beer, one of each per person.

2) Tacos for the main course - 3 per person, plated, and served in these metal servers below:

. The taco choices will be grilled marinated beef, chicken, shrimp, and something for the veggie eaters.

3) For dessert we're serving individual molten lava cakes with raspberry sorbet, and after that we'll be serving our wedding cake (princess cake, a classic here in Sweden) with coffee. Up until a few days ago, I had been feeling confident that this would be enough food, plus all the alcohol (we're having an open bar), PLUS salmon wraps at our cocktail hour. But now.. I don't know. Is it weird to not have any sides to the tacos? Like a salad or even chips and salsa?


My mom has been suggesting adding a salad or just simply some kind of a "vegetable dish", but I don't really know where a salad or even a veggie dish would fit in with our concept. I think she's so used to the typical wedding food menu of protein/starch/green that she's having a hard time wrapping her head around us having such a non conventional menu, but I can't help but feel guilty because she's my mom and I want her to be happy like the rest of our guests. My fiancé keeps saying it's our wedding and that people will just have to deal with what we're serving which he is right about, it IS our wedding.. but I don't know. Appreciate any advice!     What about some rice? That would be something easy and cheap to add to the menu. And it is a crowd favorite! I think that chips and salsa/guac would be perfect to have on the table as a little snack for people to munch on while they are eating.
