Rehearsal Dinner Food

So my partner and I are from two different states. Our rehearsal dinner is going to be very casual. We wanted to cater food from some classic places where we are from. The wedding is being held in my home-state so it is easy for me to do. Any ideas on how to cater food from another state? He is from Nebraska and I am from Georgia. So the distance between the two is pretty significant.

    ....I don't think there is any way to really do that which wouldn't cost a ton of extra money for shipping. Can you maybe do like...his favorite type of food and your favorite type of food? Or maybe find a caterer in Georgia who can make some classic Nebraskan dishes (please don't ask me what that would be lol)?.

    So I know on goldbelly.com you can order from restaurants in other states but it’s extremely expensive. I would just do his favorite type of food instead.

    We got catering from Publix for our rehearsal dinner. We had fried chicken, boars head sandwiches and all different kinds of platters. S’mores, hot chocolate, tea, and lemonade.

    You may have have a difficult time finding any place that agrees to ship food that far. Are there certain foods popular in his area that a local caterer is equipped to prepare? Nebraska brings to mind meat and potatoes type meals which any local restaurant can fix.

    Could you maybe have the desserts come from his home state? If he has a favorite bakery or restaurant that has a specialty item - reaching out to them directly and asking them to ship - desserts are lighter in weight and maybe cheaper to ship.

    Other option is for you to fly there, and bring back via dry ice... although in the end it may cost the same. Is someone coming from there for the rehearsal dinner, could they bring the food and you pay for the food and shipping via their flight?
