How do you know how many plates, glasses, silverware, etc to order? It's my understanding you order the rentals before the RSVPs roll in. I'd hate to pay for way more than I need.

Hi Natalie! The rental company should be able to work with you on the best way to estimate!! I'd also ask them if there is a "final headcount" date closer to the wedding where you can update the order (and cost) based on your final guest list of "yes" RSVPs!!
If there isn't any room for adjustments then I'd think critically about your guest list! The "typical guidance" is to estimate that 80% of your guests will RSVP yes, but that is impacted by a lot of things like...
- travel distance (destination or travel-heavy weddings will have more declines)
- what day of the week your wedding is (a weekday wedding may have more declines)
- if you're getting married on a holiday or popular wedding day (like a Saturday in September or October)
- if your wedding is kid-friendly or adults-only (you may see more declines if it is adults-only)
- guest list size (smaller or intimate weddings have a higher attendance rate)
