My fiancé and I decided not to do a seating chart but we are debating if we want table numbers or not and also debating if we want table name cards for all the guest or not? We are having a buffet and have about 250 people.

That's way too many guests to not have a seating chart. Assigned seats aren't necessary, but assigned tables absolutely are, regardless of how dinner is being served.
