I am French and my fiancee is from Louisiana , we live in VA and we will get married in VA. I am trying to mix both in a barn wedding ..and I don't where to start ..any ideas for food and wedding favors ?

In order to prevent it looking confused, I would choose your color/theme/vibe/decor based on what looks good in the venue. Then add key touches that represent each of your cultures. Food and music are 2 key ways to do that.
