Stacking Cheesecake

Carrie , on May 24, 2017 at 8:21 AM Posted in Do It Yourself 0 17

I really have my heart set on using a three tier pillar/plate set up to display my cheesecakes. 12", 10", and 8", and of course I know they are heavier than normal cakes. I don't want to set myself up for disaster! Thoughts? Advice? Experience?

I have only done one wedding cheesecake,(it was very cool; each layer had a different topping....yummmoooooooo)but it was stacked, not on pillars.

You're right in your assessment that they are way heavier than cake. I'd take the setup to your baker and have a heart to heart.....

I would ask your baker about it! We're having a cheesecake but they'll be stacked on each other, not on pillars like in your picture.

    Definitely ask the baker.

If you use a display like in your photo, the pillars will need to be lower. More stability if they are closer to the foundation.

The pillars are 5", with 2 - 2" additional pieces, so I could certainly lower it to make it closer for stability. Her cakes are every bit of 4" tall. My baker, who makes the best cheesecake I've ever tasted has never actually done a wedding before. So that's why I am attempting to assemble myself with her pre-made cakes.

I wouldn't stack it yourself and the picture you have posted doesn't look like it can hold the weight of cheesecake.

I looked on pinterest and saw a few pictures of the top being a cheesecake and the bottom layers being cheesecake bites or cheesecake cupcakes.

Would you consider an offset tiered stand? That would give you a sense of the look you want but eliminate some of the guesswork about their structural integrity

ETA thanks to the post above mine, now I want a cheesecake cupcake sooooooo badly!

Here's the stand with the 4" dummy cakes. Maybe I could just have the 12" cheesecake on the bottom and decorate the dummies in middle and on top to lessen my risk of disaster!

Those offset tiered stands are gorgeous! I'd check into one of those, personally.

We are doing mini cheesecakes for our wedding! Our baker has these that we can to display them all, (we are going with the square) They are metal so they can support the added weight of cheesecake, maybe you can find something similar that will work for you?

Those pillars would definitely sink into the cheesecakes below. The bottom tier will most likely be speared all the way through, and the middle tier would most likely have huge dimples where the pillars are (hopefully they sink evenly so it isn't lopsided). I would be terrified to touch it with how precarious it would most likely be. ETA: remember cheesecake is heavy but soft! It'll cave sooner than a traditional cake

So, I'm thinking of just having my bottom cheesecake and having fake decorated cakes for the middle and top layers. Otherwise I would be a worried mess about a disaster!

Yeah, I'm relatively certain that won't work. The weight of the upper tiers would cause the pillars to sink into/through the lower tiers. Cheesecake is soft and heavy.

I would have a real tier for the top and then dummy cakes below if you are set on this stacked arrangement. Then have the staff take it to the back to be cut, and sub the real cakes for the lower tiers at that time.
