I am like 5'4 so I am short. My cousin is 5'11. I don't want to use him as my best man because of the difference in size...think it might look weird, but I can't seem to find someone else who's shorter. So far I have 2 groomsmen who are like 5'11 and another who's 5'6...I want my best man to be not...

I'm really glad you came back and shared some insight as to why this is important to you and your family. I understand that not everyone sees things in the same way and I respect other views, opinions, culture, etc. Thing is, at the end of the day, it's your (and your FW's) wedding and if it matters to you to have your cousin be your BM then I would go for that. If you feel the way your family feels, then continue searching for someone not so tall. Best of luck.

Let your photographer know of your insecurity and he should be able to incorporate arrangements of people that don't accentuate the height difference.
