Using ground beef for reception dinner

We are planning a reception for up to 300 people of all ages at a barn venue and our family and friends are going to be helping make the food. A family member wants to donate meat from a steer he raised for our use, but it's mostly ground beef. We had first thought of an Italian bar, with meatballs...

We are planning a reception for up to 300 people of all ages at a barn venue and our family and friends are going to be helping make the food. A family member wants to donate meat from a steer he raised for our use, but it's mostly ground beef. We had first thought of an Italian bar, with meatballs and such, but aren't sure how to prepare and hold pasta for that many people. We will have lots of helpers, but the kitchen for our use is in the house, not the barn. Other suggestions have been going with a taco bar, but while that sounds tasty and easy to prep, I don't love that idea for a number of reasons: the mess, number of guests, and maybe the more informal aspect of it.

I would love for anyone to weigh in on this, with opinions on the above two ideas, and any others that would use ground beef are most welcome, especially if they can be prepared ahead! Ideas for sides would be great too. We are keeping it as low budget as we can. Thank you!

    Hmm I have never done this for an event as large as yours but the way I have always kept food warm for a gathering are with sternos and trays (sorry I m blanking on the actual name of the foil trays), a set up like this

    You can get them from Party City. As another food option baked ziti or stuffed shells are a usually a crowd fave and can be heated up/kept warm and served in a set up like above. As far as sides if the main dish is a pasta I d go with salads, cheese, breads, and fruit. Good luck and happy planning!

    Number one I think that's really awesome how you're getting the beef and using it in general...but honestly the Italian items I think would be the best liked by a group, easiest, and most practical to use it. You could definitely keep meatballs and pastas in prep easily.

    Yes, leaning toward pasta, for sure. As much as we love tacos, and easy as it might be, I just don't like the idea of the mess. Thanks for your vote. Smiley smile

    I make what I call American egg rolls and they’re always a hit! Egg roll wrappers, the beef and cheee (you can add veggies and other things but to keep it simple just drained ground beef and cheese) roll them and fry them up or bake them. Make ahead of time freeze and take out and reheat in oven. I think taco bar is a great idea too or loaded nachos but definitely understand the mess with that. Congrats on your day!

    How about baked ziti or lasagna? Something that's easy to make in large quantities and is easily kept warm.

    I think if you are able to rent some warmers for the food you should have no issue with the longevity of them being stored! But the first option would be the better!

    This is what I was going to say! Lasagne might be easier to prep and serve for such a large number of guests in that kind of environment when compared to pasta!
