The day we want our anniversary is on a Thursday and most people will be working. How do we still have our anniversary on that day but have the wedding with our voes and everything that Saturday?

You could do a courthouse wedding on that Thursday (just to make everything official on that day), and then host the celebration on that Saturday! You could still do a ceremony with your vows on that Saturday.

Have the ceremony on Thursday and vow renewal/party on Saturday. Make it clear on the invitation that they are separate days.
