Selecting a preliminary menu for the wedding reception in early August. Our fish selection is a Lemon Dill Salmon. We’re unsure about our chicken entree. Despite the formal theme, we want our wedding reception to be fun SUMMER party atmosphere, any suggestions for the chicken entree?

    What options does your caterer offer for a chicken entrée? Chicken marsala and chicken piccata are pretty popular options I believe.

    What does your caterer offer? You can do something with pineapple or coconut or bbq sauce. Maybe a mango salsa over the top.

    Girl, some good old fashioned BBQ basted boneless, skinless chicken breasts on a propane grill for some good char. You could serve them with sides of garlic mash & almond green beans drizzled with balsmic glaze or smoked gouda mac n cheese & steamed garlic broccoli.

    Another option could be lemon italian marinated grilled chicken breast, sun dried tomato risotto, and a summer medley of veggies such as green & yellow squash, onions, green beans, peas.
