My co-worker always wanted to officiate a wedding so I said to her why don't you do our wedding and now she's officiating and doing other stuff for our wedding

We don’t have one yet. We’re asking a family friend who officiated my FBIL’s wedding. If she can’t do it, we’ll likely use the options where we can marry ourselves and not have one.
